SOURCING

Every cup begins here.

High in the mountains, where the mist still clings to the trees, our coffee grows slowly — patient, unhurried. When the cherries turn deep red, they are picked by hand. One by one. The way it has always been done.

ROASTING

Where character is revealed.

Green beans arrive carrying potential. In the roaster, heat unlocks what the origin promised — the sweetness, the acidity, the depth. Each batch is roasted to order, in small quantities, with precision. Not too fast. Never too dark. Just enough to let the bean speak.

GRINDING

The ritual can begin.

A fresh grind changes everything. The oils, the fragrance, the depth — all held inside the bean until this moment. Too coarse and the cup is hollow. Too fine and it overwhelms. Find the middle. The cup will reflect every decision you make here.

  • SPECIALTY COFFEE VIETNAM

    Vietnam · Măng Đen

    Nestled at 1,200 metres above sea level in Kon Tum Province, Măng Đen is one of Vietnam's best-kept secrets. A cool, mist-wrapped plateau sheltered by ridgelines, where volcanic soil and pine forest create a microclimate unlike anything else in Southeast Asia.

    Here, small-scale farmers hand-harvest Arabica cherries that the cooler nights have allowed to develop slowly — accumulating sugars, building complexity. The beans are washed and processed with care, each step deliberate.

    The result: smooth cacao, stone fruit, a whisper of spice. A cup that carries the patience of an entire growing season.

  • SPECIALTY COFFEE BRAZIL

    Brazil · Alta Mogiana

    Tucked into the southeastern reaches of Minas Gerais, Alta Mogiana is one of Brazil's most celebrated coffee regions — and one of its most storied. Dating back to the 19th century, this is a land that has always known how to grow coffee well.

    At 1,080 to 1,270 metres above sea level, warm days and cool nights slow the cherries' development, allowing natural sugars to deepen. Volcanic soil, well-defined seasons, and generations of small-scale farming knowledge do the rest.

    Alta Mogiana holds a Denomination of Origin — a formal recognition that what grows here cannot be replicated elsewhere. The cup reflects it: chocolate cacao, dried raisin, roasted almond. Familiar, and quietly exceptional.

  • SPECIALTY COFFEE ETHIOPIA

    Ethiopia · Hambela Wamena

    In the Hambella district, Guji Zone, smallholder farmers cultivate coffee on plots no larger than two hectares — grown around their homes, at altitudes between 1,900 and 2,150 metres. Ethiopian heirloom varieties: Kurume, Dega, Wolisho. Grown as they have always been grown here — without chemicals, without machines, by hand.

    After harvest, the ripest cherries are sun-dried whole on raised African beds for 21 days. The natural process at its most deliberate — fruit and bean drying together slowly, the cherry gradually passing its character inward.

    The cup that follows carries all of it: blueberry, plum, rose, cola. Complex, fruit-forward, unmistakably Guji.
